If they’re Ukrainians, why the interviewer says “Добрый день”, in Russian (notice how the “e” is pronounced “je”) instead of “Хороший день” or “Добрий ранок”, in Ukrainian (notice how the “e” is pronounced “e”)?

No, I disagree. Communism doesn’t have to be authoritarian, in the same way capitalism doesn’t have to be authoritarian either (again, both are merely economical systems). But both systems are prone to authoritarianism by people who want to control every single part of people’s lives. That’s neither communism nor capitalism. That’s fascism.
According to the time I was learning Russian and Ukrainian, it’s pronounced the way it’s written, like “o” being “o” and so on. The last part is a diphthong, like saying “you”.
