Raspberry pi can run pihole easy, but you can install pihole on any linux machine. Just saying because raspberry pi is not that cheap anymore, but it is one of the most power efficient options.

I would, but you have to decide on your own. I dont know can you afford HA downtime, how much experience you have and how much time you want to burn. I found docker frustrating to learn but super rewarding. Keep in mind Im still new.
Its best to backup and/or get spare SD card to learn how to setup everything. Be prepared for begginer mistakes, but once you get familiar a bit it will be much easier.
If you can manage docker containers in HAOS just try it. I have 0 experience with HAOS so cant help much, but I saw Portainer is available as HA addon. You should be able to manage all docker containers with simple Portainer GUI.
I had dietpi or raspbian OS with docker, docker-compose and Portainer installed. Then I started many containers (including HA) using Portainer. If you go this path you will lose HA addons. I believe most addons can be replaced with docker containers from hub.docker.com, but Im not sure about that. Ive just seen some HAOS vs Docker posts

I backup to Backblaze B2 (6$/TB a month), but I have much less data. I also backup all my data to another disk that lives in the same server. Id probably continue doing manual backups to external drive due to the cost of cloud backups
Ive been running HA (in docker container) and NextCloud on rpi4 4gb and it was working fine, but after server upgrade (diy pc) nextcloud became much more snappy (wasnt my reason to upgrade). Not sure about paperless, but I had many more lightweight services along with HA and NC. Im also not heavy HA or NC user, just my 0.02
I could live without headphones jack, but its thick and cost almost 2x the price I can afford. Id consider keeping it if I get it for free because I like the Idea of repairability

Depends what you want to create. Organic models, mechanical parts, huge assemblies, symmulations, how complex etc.
If you need 3D modeling - blender, but you need 3D CAD modeling software I guess. Im not daily fusion user, but I was playing around with it. Im using solidworks and there is nothing available on linux that is good enough for my needs unfortunately. Thats why I dual boot shitdows… Someone said fusion can work under proton, that sounds good, Id try that. If that doesnt work for you I think freeCAD is your best bet.
And yeah Cura works on linux 🥰
It was a pain for me and it still is sometimes, but I like it. I found myself enjoying thinkering more than actual services I host hehe. I think its rewarding, but yeah it can be frustrating. I personaly know exactly 0 people that heard about docker, so dont feel bad about being lost and failing that attempt. If you dont want to manage a server you dont have to give up on linux completely. I started using POPOS! few months ago and its more friendly than windows IMO, it just works! Good luck mate
